Creamy Celeriac Soup

While were slowly heading for the real Spring season over here I couldn’t resist sharing this tasty Winter recipe on the edge of Winter. It was just too good to keep to myself. Last Monday I shared a Greens & Beans Stew Recipe in which celeriac already played a role. It’s one of those veggies that I passed by for years because I just didn’t know what to do with it other than use it in a Dutch split pea soup (which no one in my family likes except myself). But since it’s a very common veggie over here during Winter time and it’s pretty cheap then, I was missing out on a lot by not using it. So one day (a few Winters ago) I finally took one of them aliens home with (my son thinks it looks like an alien, especially when it’s got a lot of roots at the bottom) and I began creating alien dishes with it ;-)

 

While its nutrional value might not be as mind-blowing as the nutritional value of kale or blue berries, it still adds some vitamins, minerals and fibre to the daily intake. And with colder temperatures in Winter eating root vegetables is not a bad idea. They are warming, filling and grounding. And don’t forget the creamy consistency they can add to dishes.

 

Today’s recipe is called Creamy Celeriac Soup in which I used the part of the celeriac that I had left from the Greens & Beans Stew Recipe. The creaminess has a lot to do with the organic full fat cream I used, but the creamy consistency also comes from the celeriac itself. The combination of the celeriac with the cream gave it almost a cheesy taste. One that my daughter could really appreciate since she’s a big cheese fan.

 

I’m sure this soup can be made in a vegan way by leaving out the full fat cream. The celeriac and potato give texture enough to the soup to create a warming thickness. But the cheesy flavor will probably be missing then. You could opt for a vegan cream made from soy instead if you want.

 

I think this soup has a lot of things going for it:

it’s easy to make, it doesn’t take hours in the kitchen to make it, in a little over half an hour you’ve got it on the table, it fills you up, and (if celeriac is a Winter veggie where you live) it’s cheap as well! Definitely another Winter recipe that I will be making many more times in my kitchen. I hope you enjoy it too!

 

Celeriac Soup

 

Creamy Celeriac Soup
serves 6

Dietary info: gluten-free

* 600 grams of celeriac
* 2 medium-sized potatoes
* 2 medium-sized yellow onions
* 1 big clove of garlic
* 1/2 cup of full fat cream
* 1.5 teaspoons of apple cider vinegar
* 1 teaspoon of salt
* 1/4 teaspoon of ground nutmeg
* 1250 ml of water (5 cups)

1. Peel and cut the celeriac, onions, potatoes and garlic. Use 600 grams of the celeriac, you’ll probably have some left depending in how big it is.
2. Put the cut up veggies in a pan, add 1000 ml (4 cups) of the water and bring to a boil.
3. Once it boils, turn heat to medium and let simmer for 25-30 minutes, till the pieces of celeriac have become soft.
4. Turn off heat, add the rest of the ingredients to the pan and blend it all up with a stick blender.

 

How to make celeriac soup
5. Add more salt and pepper to taste and serve.
